Vegetarian Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions:
Step 1: Prepare the Peppers
Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
Step 2: Make the Filling
In a mixing bowl, combine the cooked quinoa, black beans, corn, cumin, chili powder, diced tomatoes, salt, and pepper. Mix well.
Step 3: Stuff the Peppers
Fill each bell pepper with the quinoa mixture. If desired, sprinkle cheese on top.
Step 4: Bake
Place the stuffed peppers in a baking dish and cover with foil. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
